Château Simon Barsac 1981
Roasted sesame, resin, and dry cedar aromas.
Soon after, maple syrup and pine needles appear,
with accents of licorice and star anise weaving through.
As the wine opens in the glass, honey emerges — - not simply sweet, but layered with spice, freshness, and a sense of concentration.
After about 15 minutes, delicate vanilla notes join in.

On the palate, leather, white pepper, honey, and resin arrive all at once.
The aromatic notes sensed on the nose are faithfully mirrored in flavor.
After 40 minutes of opening:
candied orange peel, dry sawdust, white pepper, and a touch of game.
It feels like honey seeping through the cracks of dry pine wood.
Even a subtle nuance reminiscent of chewing green tea leaves adds complexity,
all while the texture remains silky and refined.
Best enjoyed in a wide bowl-shaped glass,
which highlights both the layered aromas and supple mouthfeel.
