Martin Waßmer Schlatter Maltesergarten Spätburgunder 2021
Bright, fresh acidity floods the palate while a soft texture warmly wraps the tongue.
Good from the start, but becomes increasingly radiant with time — proper breathing is essential. From about 1 hour open, it was pure art.
Pouring the wine reveals a crystal-clear, luminous color.
Initially, there’s a deep, rubbery scent with rose stems — needs time to open, so half the bottle was decanted.

Texture is silky, with fresh acidity filling the mouth and comforting the tongue.
First impressions: red rose, balsam flower, and mushroom.
Lingering notes of raspberry, pomegranate, and wild strawberry.
Salivation is intense but pleasant.
After ~20 minutes: lily and lilac nuances emerge.

Hints of rose and red apple peel.
With each swirl, fleeting touches of dust, steam, and dry wood spice appear.
At 1 hour: a light meaty note reminiscent of paprika-spiced chorizo.
Inhaling deeply brings thyme, rosemary spice, black pepper, and newspaper aroma.
Breathing improved the wine significantly — from this point up to 2 hours, it was in perfect balance, fully open yet strong.
Meaty tones, red flowers, and berries blend beautifully with spice.
Even after 3 hours in the decanter, the wine stayed lively.
