Chrysanthemum blossoms, lemon, and ripe apricot on the nose.  


Hints of red apple juice with a subtle, silky saltiness.  

 

 

Acidity: ●●●◐○  
Sweetness: ●○○○○  
Body: ●●○○○  

 


Evokes fermented peach juice and yogurt.  

Much fuller and more complex than a typical Alvarinho.  

 

This is genuinely delicious.  

 


Enjoyed over the course of 2 hours.  

The earlier notes deepen with soft and balanced acacia honey aromas.  

 

Still layered, still clean — very impressive.  

 

If tasted blind, would I have guessed Alvarinho?  

It might’ve felt like a precisely oaked Chardonnay.  

Aged for 9 months with bâtonnage in French barrels, followed by 12 months of bottle aging.

Annual production is around 2,000–3,000 bottles, with only about 150 bottles imported into Korea each year.


**Bâtonnage**
A winemaking technique during aging where lees (yeast sediment) at the bottom of the barrel are stirred regularly using a baton, reincorporating them into the wine. Common in French oak aging, especially for white wines like Chardonnay.
