15 minutes after opening, the first sip:
Strong green herbal character. A hint of raisin comes through, but the acidity and alcohol feel a bit sharp.
The meaty aroma detected on the nose is also prominent on the palate.
After 30 minutes:
Aromas of red berries—like raspberry and wild strawberry—begin to emerge.
When left to sit in the glass, the wine smells jammy.
The intense early notes mellow slightly: the black pepper spiciness softens into a steamy nuance, and the rich meatiness transforms into leather.
At this stage, graphite and newspaper aromas become more pronounced.
After 50 minutes:
The wine feels much clearer than it did at the start.
The previously musty meat and leather notes recede, revealing clean, bright red fruit aromas. Blackberry, cassis, black rose petals, and green stems appear.
The spicy character, like crushed herbs, lingers around the nose.
Drank over the course of 2.5 hours.
In the final glass, newspaper ink aromas dominate.
The flavor recalls pomegranate.
At first, the strong acidity and alcohol made the recommendation puzzling.
Only after at least an hour did the vague off-aromas disappear, revealing a clean structure of red fruit and spice.
With 60% Cabernet Sauvignon and 40% Merlot, this wine could be polarizing depending on handling and aging.
Proper decanting and pairing are crucial.
